Vineyard: 7 hectares of trellised Garnacha Tintorera, 35 years old, very low yields (less than 2.9 kg/vine). Vineyard surrounded by Mediterranean forest, with sustainable management and green pruning to regulate production.
Soils: 780 meters above sea level. Calcareous sandy-loam soil, with limestone rock in the upper part and levels of gravel and sand in the lower areas.
Winemaking: Manual harvest. Destemmed grapes without crushing. Cold pre-maceration, fermentation with indigenous yeasts at controlled temperature (max. 28 ºC). Gentle pump-overs and manual pigeage. Total maceration ~20 days. Malolactic fermentation in French and Hungarian oak barrels.
Aging: 10–12 months in barrel (70% new oak, 30% second use), plus a minimum of 6 months in bottle.
Alcohol content: 14.5% vol.
Analytics: Total acidity 5.22 g/L · Total SO₂ 65 mg/L.
Optimal consumption: Up to 8 years from the vintage.

Tasting Notes

Dense, deep, and brilliant garnet color. The nose displays marked intensity: wild berries, black fruit compote, balsamic notes, spices like black pepper, and a fine toastiness that grows with aeration. On the palate, it has a medium body, soft and rounded tannins, ripe black fruit, perfectly balanced acidity, and a long, sustained, and harmonious finish.

Pairing

Pairs well with oily fish, stews, game meats, roast lamb, and cured cheeses. Serve between 14 and 16 ºC.
