The Vineyard

The grapes come from vineyards located around Sainte-Victoire mountain, near Aix-en-Provence, in a setting famous for the landscapes painted by Cézanne. The clay-limestone soils with limestone pebbles favor the vine's water regulation and provide structure and aromatic complexity.

The relatively cool climate for the region, with significant thermal contrasts between day and night, allows the wine to retain freshness and balance.

Winemaking

The grapes are harvested at night to preserve their aromatic freshness. After destemming, they are immediately pressed and part of the must undergoes cold stabilization for seven days at 0 °C.

Fermentation takes place in stainless steel tanks at low temperatures to preserve the aromatic purity. Afterwards, the wine remains on fine lees for three months with gentle stirring.

Tasting Notes

Bright pale pink color with delicate lychee reflections. The nose is complex and very aromatic, with notes of raspberry, red berries, peach, white-fleshed fruit, and white flowers.

On the palate, it stands out for its freshness and balance. Crisp and elegant flavors lead to a long finish with mineral nuances and a delicate saline touch.

Pairing

Perfect as an aperitif or paired with seafood, fresh appetizers, raw vegetables, or black olive tapenade.
